The Chef

Misha's kitchen took the long way here.

Misha Laurent grew up in Paris, surrounded by the North African and Mediterranean cooking of the city's markets. Formal training at the Sheraton in Munich sent him further still — through Europe, South-East Asia and North America, chasing the kind of street food you can't order from a menu, only find.

After running the kitchen at two well-known Blue Mountains restaurants, Misha opened his own place on Katoomba Street: eight dishes, eight countries, no filler. "We shouldn't have to travel to Sydney — or abroad — to get these," he says. In 2019 he added a food trailer for private events and pop-ups around the Mountains.

Paris — where the palate started
Munich — Sheraton hotel training
SE Asia & N. America — street food, city by city
Blue Mountains — head chef, two local kitchens

On the Road

The trailer travels. The flavour doesn't change.

Since 2019, the 8Things trailer has taken the same eight-country menu to weddings, breweries and pop-ups across the Blue Mountains — from Emu Plains lookouts to private functions booked months in advance.
